Sweet Treat – Easy Vitamin C Popsicles

Beyond air-conditioner, sometimes a popsicle is a perfect alternative to remain hydrated and refreshed during the summer months. We’re happy to share this summer lemon and lime lolly recipe from My Little Hong Kong Kitchen.

“Both lemons and limes — as well as oranges, tangerines, citron, and grapefruit — belong to the broader category of citrus fruit.” They are considered to be vitamin-C rich fruits.

Recipe- Squeezed Lemon And Lime Popsicles – With Mint:

To make these lollies, you need sugar syrup. This is simply equal parts of sugar and water so begin by taking a cup of sugar {I used a small/medium coffee mug} and the same cup of water and warm together in a pan over a medium heat until the sugar dissolves.

Once the sugar has dissolved, take the pan off the heat and allow to cool. Now for the flavouring; I juiced three lemons and two small limes {if you have large limes then just juice one lime} and grated the zest of one lime into the same mug I used to measure the water and sugar. I had three quarters of a cup of fresh citrus juice.

Place the freshly squeezed juice and three quarters of a cup of the cooled sugar syrup in a blender with a handful of chopped mint and 4 cups of water. Now blitz the mix for a minute or two until everything is well combined and strain into a jug to filter out large pieces of mint and pulp.

Pour the mixture into your lolly moulds and add your lolly sticks. Freeze for 4 hours or until completely frozen. 


-You can play around with different flavours in these lollies. For adults, try adding a splash of gin or vodka for an altogether grown up taste!
